Non-weight loss related victory: Well, I guess the big news is that I signed up for my first half-marathon. I’m pretty nervous, but excited. Should be interesting!
How I’m staying active: Obviously, with the half-marathon news, I’m obviously running/walking more. I actually ran a 5k on Sunday…in a little over 36 minutes. It’s the most I’ve run at one time in several years. Be prepared for A LOT of running talk until November or so (the half is on Nov. 4).
What I’m eating: Lately, I’m really into huevos rancheros…or my own easy version of it. Basically, I scramble (sometimes fry) two eggs. In a bowl, I put a heated up corn tortilla with some black beans, corn, salsa, chopped red onion, a little plain no-fat greek yogurt, a dolup of guacamole (or a couple of avocado slices) and top it with the eggs. I’d estimate it to be about 8-9 PointsPlus depending on what all you put on it. Yum!
