Still hovering around 20 lbs lost, but for full disclosure, I’ve not really been trying these past couple of weeks. Traveling and a crazy work schedule have gotten in the way. That said, I’m on vacation next week and plan to use that time to get back to normal.
Summertime can be a diet’s worst enemy. I feel like there a lot more happy hours, more pool parties with bad food and lots of beer (and not to mention that bikini you may not be ready to wear just yet), and more out of town weekends which ultimately lead to getting out of your workout routine and healthy eating habits. If you live in Texas, like me, summer is VERY hot and makes it a bit harder to want to work out.
That said, summertime also means lots of chances to grill out, and let’s just say that my waistline LOVES my grill.
One of my favorite things to make on the grill are kebabs. Weight Watchers does offer numerous kebab recipes. Personally, I tried the Hawaiian Chicken Kebabs and the Moroccan Chicken Kebabs and was quite impressed, but honestly, you really don’t need a recipe. Just use your favorite chicken (beef, tofu or shrimp) marinade and load up the skewer with chicken and whatever veggies you have lying around (keep in mind, that they should be “sturdy” veggies so that they don’t fall into the grill).
If using wooden skewers, make sure you soak them in water for at least 30 minutes prior to grilling so you don’t catch anything on fire. I also prefer to put all my veggies on one skewer and the meat on another since it usually takes the veggies a little longer to cook than the meat. Throw the skewers on the grill, and VOILA! you have a meal!
Your standard chicken kebab tends to only have about 3-4 PointsPlus. Two kebabs and a small serving of rice or quinoa and your looking at a large 10-12 PointsPlus meal, which in my book is pretty great.
